Aged Sanxia White Tea Cake

A Taiwanese aged white tea cake? Of course! Made from the 2019 spring pick of our best selling Sanxia White Tea, these teas cakes have been aging in a house right beside the fields in which they were picked for the last couple years. 

The flavor of these older leaves is much darker and richer than their younger sibling white teas. Flavors of brown sugar and ripe fruit are dominant compared to the younger Sanxia White Tea's white sugar sweetness and florals. Pressed in this way, these cakes are meant to be aged even more and we can't wait to taste them as they develop over the years. 

Produced at a partner farm only 20 minutes from downtown Taipei in one of the oldest tea growing areas of Taiwan, the tea is made in the traditional way by a tea master in his 80s. Each leaf is plucked by hand (no finger blades are even used!) and each batch of tea is tiny. This style of tea production is extremely rare and we are happy to support farmers still making tea in this old, delicate style.

Recommend Brewing Style:

Gong Fu Style: 5g per 100ml, ~95C(205f) water, 30, 45, 60 then add 5-10 seconds steeps in gaiwan. Lasts 3-4 steeps.

Western Style: 5g per 100ml, ~95C(205f) water for 1-2 minute. Lasts 2-3 steeps

Spectacular!

I didn't know what to expect when I ordered my first cake in March 2022 and received it shortly therafter. The tea exceeded my expectations with its mellow, aromatic, sweet notes. I have since ordered a few more cakes and seem to have snagged the last one in stock earlier today (March 26, 2023) and have dedicated a Hualien wood-fired teapot to it. So I just had to order another teapot to dedicate to lightly roasted oolongs.

Rich taste!

I really enjoyed the fresh Sanxia white tea so I decided to try the aged version. I'm so glad I did! The brown sugar notes are very pronounced, making this a very tasty tea. One of my new favorites!
