Shui Xian Multivar Muzha Tieguanyin

Every New Year's Holiday here in Taiwan we head up to Muzha, above Taipei City, to visit our friends and buy some tea. This year, we found this another 'Mulitvar' tea from our friend's organic garden. And this year, the dominant cultivar of the Mulitvar mix was a rare one in Taiwan, Shui Xian. It has been resting since then in the warehouse and is now ready to go!

This small organic garden has a mix of cultivars(Tieguanyin, Shui Xian, Jinxuan, Qinxin and Rou Gui) but none of the cultivar 'areas' or patches have enough for a single picking in the winter so the different leaves are mixed together for each batch. This one is mostly Shui Xian and Tieguanyin.

This year's find was processed as a normal Muzha Tieguanyin style of tea with higher oxidization and roast, with the unique mix of cultivars bringing a Shui Xian spin on the usual warm Muzha roast. Dark grapes, Shui Xian 'freshness' and a sweet finish are in store for those that get this one. For fans of the Muzha Tieguanyin genre this is great variation to try and it also works well for a cold weather brew.

Recommend Brewing Style: 3-5g per 100ml, ~100C water, 30, 40, 50 seconds then add 10-30 seconds to steeps to taste. Lasts 5-6 steeps.

Western Style Brewing:  Western Style: 3g per 100ml, ~100c water for 1 minute. Lasts 2-3 steeps
