杉林溪鳳凰谷烏龍茶
Phoenix Valley Shanlinxi Oolong
This tea is an experiment for us here at Mountain Stream Teas. The difference between the "Western" and "Taiwanese" palates overlap in many places, but in Shanlinxi the teas more popular in the local market are markedly different than those that are usually exported (well, by us anyways).
This spring pick is an example of the sharper vegetals and stronger florals that are preferred for this style of tea in the local markets. Teas like this are often had after heavy meals with small groups where the stronger vegetals, florals and touch of bitter are highly sought after, in contrast to the general western context of relaxed and isolated brewing. We are not sure which style most people prefer, but we haven't had this style on the site before so we thought we might as well give it a try!
**Chinese characters were used for the name of this tea because we couldn't really figure out a good name for this release without it sounding 'off'. It is from the same area as the other Phoenix Valley Shanlinxi we have on the site.

Recommend Brewing Style:
Gong Fu Style: 3-5g per 100ml, ~100C water, 30, 45, 60 then add 5-10 seconds steeps in gaiwan. Lasts 4-5+ steeps.
Western Style: 3g per 100ml, ~100c water for 3 minutes. Lasts 2-3 steeps.
