Hand plucked without blades and produced by multi-generations of the same family under the watchful eye of a 4th generation tea farmer in his 80s, we have been waiting to stock a green tea like this for a long time. Delicate, soft and sweet, the sweet pea vegetal of this beautiful tea lingers long after you finish drinking it. Made in the traditional style of Bi Lu Chun, this tea is best consumed the traditional way as well. Throw some in a tall glass or mug, add some 80-90C water and enjoy! Add a little water if it gets too strong or cools down too much and imagine yourself in a bustling, smoky Chinese Teahouse.  

Produced at a new partner farm only 20 minutes from downtown Taipei in one of the oldest tea growing areas of Taiwan, this style of tea production is extremely rare as the teas produced in this fashion do not serve the current Asian Market taste points for tea, namely strong, bitter and predictable flavors. Each batch processed this way is slightly different, and the strength of these teas is in the subtle lasting sweetness, deep flavors and smooth drinkability of traditionally made tea. We are happy to support a family still making tea in this old, delicate style.

Method: Hand picked, processed on site, very small batch

Oxidization: 1-2%

Recommend Brewing Style:

Gong Fu Style: 5-7g per 100ml, ~85-95C(195-205f) water, 30, 45, 60 then add 5-10 seconds steeps in gaiwan. Lasts 3-4 steeps. (While brewing this way is fine, this style of tea is best enjoyed 'Grandpa Style' or western style)

Western Style: ~5g per mug, ~85-95C(195-205f) water, add water for heat, if it gets too strong, for taste. Drink all day!

On August 28th, 2020 we were lucky enough to join our friends in Sanxia as they made some fresh green tea and we tried to document as much as we could. The steps outlined in the video are: . 1. Picking . 2. Wilting . 3. Kill Green(Fixing) . 4. Shaping . 5. Drying . 6. Ready to Drink! . This farm is a multi generational farm and the Master in the video has been teaching his teenager grandson this summer. It was a pleasure, honor and amazing learning experience to be around a family doing things the right way. We are looking forward to many new projects with them in the future. . This extremely fresh tea is currently for sale on the site listed as Sanxia Green Tea (Late Summer Pick). Greatly exceeded expectations

I generally do not favor "vegatal" and "fresh grass" in a green tea but the "sweet pea" in the description suggested that I give this tea a try based on my experience with the Sanixia white tea. My banko clay kyusu seems to be the perfect way to prepare this offering, and the result is a highly pleasing balance among vegetal, fresh grass, and mild sweetness. I wish that I'd ordered more than 50 gm.

SMOOTH & DELICIOUS

I purchased it after reading Noah's review. I also didn't like green tea because they're always bitter and not tasty. BUT THIS ONE IS NOT. Very smooth, sweet, vegetal (reminds me of a spinach soup? Forgive my rookie tongue), fresh, tasty. I like brewing it western & grandpa style. I would definitely repurchase this green tea!

Wow! A really smooth green!

I'm normally hesitant around green teas because of their bitterness, which I'm not the biggest fan of. I normally lean towards oolong tea for that reason. But I decided to pick up some of this Sanxia green because of its affordability, and it's really tasty! No bitterness, even when brewing at a much higher temperature than I would normally brew a green at. It fills your nose with that sweet pea flavor, a little fruity and a little vegetal. Give it a try if you can get your hands on it!
