CY Chen's Winter Phoenix Dong Ding

A younger Tea Master's take on the classic charcoal roasted Dong Ding Oolong genre, there is a very good reason why CY Chen has become increasingly know in the tea world. Winter 2024 was a great year and this mid roast charcoal roasted oolong is a beautifully golden mix of warm roast, dark fruit and complex caramel sweetness that places CY Chen's masterful skills on show.

Made from the material of his multigenerational farm in the Dong Ding area, it is hard to say which exact cultivar of leaves are in the tea as many of the tea trees are old and where planted from seeds or unknown cuttings. In general, they are in the Qin Xin family, which is easy to tell in the finished brew.

This is a beautiful, mid roasted oolong and we are looking forward to having more teas of this caliber on the site soon!

**This tea is very expensive and not best suited for beginners to the genre of charcoal roasted oolongs. For those that enjoy the genre, this is one of the best you will ever have.

Wonderful tea

A beautiful cinnamon / biscoff cookie note. warm, comforting, and nostalgic. Great for the holidays. Grateful to be able to try this tea before it went out of stock.

about as clean as Dong Ding's can get.

Really nice. Aroma is that of your typical Dong Ding, but with a back-end; really curious sweet complexity.

It doesn't get cleaner than this example. smooth, roasty sweetness.
