**We finally have this one back in stock! It is a fresh Winter 2025 pick and is a wonderful example of the flavors this unique cultivar can provide.

After a long wait, we finally have some #21 Hong Yun black tea to add to the site! This up and coming newer cultivar creates a fascinating mix of red cherry, citrus, peppery spice and strong assamica style strength on the palate when made into a black tea. Grown agrochemical free in a slightly higher elevation than most gardens in Sun Moon Lake, there is smoothness in this tea's strength as well!

Developed by the Taiwan Tea Research and Extension Station by breeding Keemun and Nepalese assamica tea trees, this recently released cultivar has been in high demand due to its uniquely pleasant flavor profile and novelty. If you are a fan of the Ruby 18 cultivar, then this black tea is a must try!

**As a newer, in demand cultivar it has been hard for us to find a #21 black tea that has the right combination of value, quality and cleanliness. We are happy to have found this one and look forward to getting more from this new partner farm in Sun Moon Lake.

Method: Hand picked, processed on site, very small batch

Recommend Brewing Style: 3-5g per 100ml, ~95C water(205f), 30, 30, 45 then add 5-10 seconds steeps in gaiwan. Lasts 4-6 steeps.

For stronger brews they can be brewed for up to a minute at a time but be careful not to make them too strong!

***Not recommended for western style brewing***

I love this black tea. The instructions say not to brew it western style but I've had great success brewing it that way for 45s to a minute. As noted, it is extremely easy to brew this tea for too long so be careful. Would not recommend brewing this in a pot or anything more than 8oz of water.

The tea itself has a slightly sweet, citrus upfront taste. Like many black teas from MST, it reminds me of the ocean. Would and will order again
