Su San Pian's Roasted Oolong
It is not often that you find an artisan that is at the top of his craft. We first met Su San Pian through a friend 3 years ago and we are finally ready to start sharing his teas.
Born into the the famous Su tea family on Dong Ding Mountain, Su San Pian has honed his skills for his entire life. At our first meeting we found out that his teacher, his uncle, was the same Mr Su who roasts our Old Master Dong Ding series of teas! While many in his extended family have gone the conventional route, San Pian decided to follow a different path. All of his teas are grown in wild gardens, with no outside inputs.
What this means is that the material of his teas is pristine, and limited. The benefit of this limited nature of tea material however is that he controls the entire processing of the teas himself, doing every step of the processing personally.
What is created are teas that are unique in their quality and care. Consistently the best teas of each category we have ever had. His most famous products are his white teas, which we hope to have stocked here in the Back Room this spring.
The two teas on offer first are two heavily roasted teas made from similar material on Dong Ding Mountain but heavily roasted in very different ways. One is electric roasted, the other is charcoal roasted, and both are some of the best roasted teas we have ever had:
Electric Roast: Fresh baked good, chocolate covered cherries, touch of spice, caramel, thick mouthfeel, energizing with both a cooling and warming body feel
Charcoal Roast: Rich, warm and sweet charcoal, marshmellows, cigar smoke, hints of dark chocolate and red fruit with a warming, relaxing and full bodyfeel
Both teas reveal themselves very differently each steep and deserve close attention and a practiced hand. They are exceptional teas. We are happy to bring such teas to our tea friends. We hope that you enjoy them.
** It has taken us three years to share these teas because of the general esoteric and controversial nature of teas of this caliber. And the high cost. We have decided to release these teas to long term friends of Mountain Stream Teas only. If you like our roasted teas you will most likely enjoy these.

Recommend Brewing Style:
Gong Fu Style: 3-5g per 100ml, ~100C water, 30, 45, 60 then add 5-10 seconds steeps in gaiwan. Lasts 5+ steeps.
Western Style: 3g per 100ml, ~100c water for 2-3 minutes. Lasts 3+ steeps.
