While searching for teas late last year (2018) we came across a farm that met our standards for cleanliness and quality. In passing conversation we asked if they had any aged teas and to our pleasant surprise we were offered this tea. Produced sometime in the late 1990s, this Baozhong had been sitting in the storeroom for 20 years, picking up the tastes and smells of the mountain. With a flavor profile closer to the rich forest floor of a ripe puer, this gentle tea is a fun one to try to see if you like the taste of Aged Oolongs before you take the plunge to more expensive teas.

Status: Organic But Unregistered

Cultivar: Qin Xin

Season: Late 1990s

Method: Hand picked, processed on site, very small batch

Oxidization: 10%

Region: Nangang, New Taipei City

Recommend Brewing Style:

Gong Fu Style: 3-5g per 100ml, ~100C water, 20, 30, 40 then add 5-10 seconds steeps in gaiwan. Lasts 4-5 steeps.

Western Style: Not recommended for western style brewing

Excellent Aged Oolong

Bought this on a whim since this tea could be almost as old as me!

Highly recommend - definitely like the gentle flavor - ever so slightly sweet on the first sip, and finishes very cleanly with the slightest of sweetness still. Virtually no bitterness if brewed according to directions.

If you don't have time to go through all the ceremony of many tiny cups of tea, you can do what I do -
15g tea + 8oz (~250mL) water [My hot water dispenser comes out at 90°C]. Steep for ~25 seconds, and then pour into another cup. Enjoy!
