Another find from the 2020 Tea Expo this tea is a great expression of the Chilai Mountain terroir. Fresh and sweet vegetal that finishes up with that gorgeous sweet and tart fruit aftertaste that this newer tea growing mountain area is becoming famous for. Unfortunately, by the time we asked for more of the winter pick it was sold out and we only have about 300g left. We are in talks with the garden to see if we can get our hands on the spring or fall harvest but we may just have to wait until spring. In any case, you can try it now while it lasts!

Recommend Brewing Style:

Gong Fu Style: 3-5g per 100ml, ~100C water, 30, 45, 60 then add 5-10 seconds steeps in gaiwan. Lasts 4-5+ steeps.

Western Style: 3g per 100ml, ~100c water for 3 minutes. Lasts 2-3 steeps.

Velvety & sweet

Smooth and sweet, pleasant, velvety mouthfeel. From the second steep on there’s something of marzipan. After a session, I sometimes leave the tea with a little bit of water in the gaiwan overnight. The resulting sip for this tea here gave a nice, cherry-flavoured surprise! Summary: If there were any left, I’d definitely order more of it, and I’m keeping my fingers crossed that MST will get their hands on the 2021 spring harvest.
